pesto making

During lockdown we haven't been going to the supermarket, we order online every 2nd week, and our veggie garden hasn't been giving us much lately.
So we have been missing fresh green leafy veggies.
one day when we were in our creek surprise we found watercress it is greeny leafy lettuce type plant that grows in freshwater.
so we decided to make peppery, yummy watercress pesto.
*handful of nuts (we used almonds and pumpkin seeds)
*glugs of olive oil
*lemon (juice and zest)
*salt and pepper
*big handfuls of watercress
*3 cloves of garlic (we LOVE garlic)
blend ALL in a blender
Then my fav part...
eating this with my homemade crackers
